I think I have hijacked my own thread, but basically a 120 str and 80 Int may be a great warrior, but it would be better to have 80 str and 120 int for an elementalist right?

essentially yes.. it gives you more mana for fire power.. but the STR is great to give you the HP to take a few hits.

You can't max more than one stat?

Boosters work for only one stat at a time. You can't run multiple boosters.

you can max all stats but you can also have 1 stat with boosters to push it past max which is 100 up to 140 for one stat
this allows you to wear higher armors or weapons depending on thwe stat you boost and your class

I was going to go warrior as it appeared to be the most easy one to start with, extra HP go along way at the start.

as classes are interchangeable class does not really matter
the important question is race as this cane not be changed

what are the differences between the races?

pretty much just your base stats are the only difference besides look.
